This week’s Diversity-Owned Spotlight is Trio Plant-based. Owned by Louis Hunter, it’s the First African American owned 100% plant based restaurant in Minnesota. Even meat eaters will enjoy the flavors of its soul food! Several trips down south introduced me to my love of soul food. Admittedly, I was skeptical if a Northern restaurant, let alone a plant-based one could make soul food any good. The food isn’t good – it’s GREAT! The mac & cheese had me believing there was real cheese in it. Soul greens are one of my favorite green foods on the planet. Trio’s greens are some of the best I’ve had, little kick to them and the flavor was out of this world. I didn’t miss the bacon or ham that’s usually in greens one bit, but wished I’d gotten two orders of it. And the cornbread with it’s maple butter: amazeballs! I’m not even a fan of cornbread but when I scarfed mine down I was sad I hadn’t gotten a second order. Trio has burgers, wraps, macs, desserts, and build-your-own soul platters. The menu is available for pick-up or Postmates delivery. They’re closed on Mondays, so plan your order tomorrow.
